This fully equipped venue is available to hire. Work with one or more our great chefs and we create a culinary memorable day (half days available). University of Brighton Student Services come to the Culinary Arts Studio

Student Service annual Away-day was held in Eastbourne this year…As part of the Promoting Wellbeing theme the Culinary Arts Studio team of Ken Woodward, Linda Birnie demonstrated the application of functional foods as an ingredient. The sessions were titled “It’s food Jim but not as we know it!” giving an insight into how pro-biotic drinks like Yakult and Actemel can be used in summer recipes. The sessions included tastings of an Iced Green Tea, a selection of dipping sauces, Futomaki and Hosomaki style sushi rolls and a banana sorbet. Technical nutritional questions were answered by Sue Burnett from Student Services who also works for the School of Service Management teaching Nutrition and Food Hygiene to undergraduates on the International Hospitality Management Programme.

The feedback was for the day was very positive, summed up by one participant as “the sessions were stimulating, informative and tasty!”

Sample recipe

Yakult ‘Iced Green Tea’

500 mls boiling water
4 teaspoons loose green tea or tea bags (such as Assam, Orange Pekoe, Ceylon, etc..)
10 gms fresh ginger, grated
65 mls Yakult or Actemel

Brew the tea as strong as you like and allow to cool down, then add the Yakult or Actemel and the grated ginger. Pour over ice cubes or crushed ice, garnish with slices of fresh lime and sprigs of fresh mint or basil and relax…
Optional: 1-2 drops jasmine essence (available at Asian/Chinese food stores)
